Here are some easy dinner recipes my family has been enjoying! I don’t use measurements when it comes to spices and frying because I season everything to my personal taste and I use as much olive oil and butter as it takes to cook and carmelize!
Quick tip:
To carmelize onions: melt butter in pan (I usually use 2 tbsp butter for 1 large onion). Slice onions. Add salt. Cook for about 10-12 minutes.
Smothered Pork Chops

You’ll need:
- Pork chops (I used 9 porkchops for my family of 7)
- Salt
- pepper
- Olive Oil
- Butter
- Onion
- 3 cloves minced garlic
- 1 cup chicken broth (based on 9 pork chops)
- 1/2 cup heavy cream (based on 9 pork chops)
Season pork chops with salt and pepper and sear on each side for 5 minutes. Set aside.
Carmelize onions. Once carmelized, add garlic, chicken broth and whisk in heavy cream. Simmer for a minute, add porkchops back in and cook until pork finished and sauce has thickened.

Philly Cheesesteak Stuffed Green Peppers

You’ll need:
- Bell peppers
- Onion
- Provolone cheese (enough to top each bell pepper)
- Steak ums
- Salt
- pepper
- garlic powder
- onion powder
- 2 tsp minced garlic
Carmelize onions. Cook Steak Ums according to package instructions season with salt, pepper, garlic powder, onion powder. Add garlic and onions back to pan.
Cut peppers in half and line baking dish with them. Add meat to each pepper and place a slice of provolone cheese in each pepper. Cook covered at 350 for 30 minutes. Remove foil and cook an additional 20 minutes.

Enchilada Lasagna

You’ll need:
- Ground beef
- Taco Seasoning
- Tortillas
- Enchillada sauce
- Shredded cheese
- Taco toppings.
Cook ground beef with taco seasoning. Once cooked, take a greased baking dish and layer tortialls, enchillada sauce, ground beef and shredded cheese. Cook in oven until cheese bubbly and melted. Top with favorite taco toppings such as green onions, black olives, cherry tomatoes, shredded lettuce, avocado, sour cream, etc.

BBQ Chicken Nachos
You’ll need:
- Tortilla Chips
- Tyson Ready Grilled Chicken Strips
- BBQ sauce
- Shredded cheese
- Queso
- Taco toppings
Precook Tortilla Chicken strips according to package instructions.
Spread tortilla chips on sheet pan. Layer chicken strips, Shredded cheese, and BBQ sauce. Cook in oven until cheese is melted.
Drizzle queso on top and slather with your favorite taco toppings such as green onions, black olives, cherry tomatoes, shredded lettuce, avocado, sour cream, etc.
